This week, I'm cooking (mostly) from Erin's 5 Dollar Dinners. This recipe looked pretty quick and tasty! Most importantly, it looked like my kids would eat it.
I wasn't able to get the picture of stuff you need, because at the time I started dinner, I didn't HAVE everything I needed. Whoops. Sometimes real life gets in the way of shopping. So, I started with what I had and sent the man on a grocery errand. Also, since I figure we wanted to actually eat at some point, I made his list visual. Remind me to tape that label back on the can. I know, I'm a control freak. He came back with the right stuff, though. So there. I did leave out the bell pepper for him (he can't stand them, but I've been using them in almost every recipe). I can compromise.
I also doubled Erin's recipe because I like leftovers to freeze in the event I don't have time or energy or whatever for cooking one night. Oh, who am I kidding. We are so not going to only eat ONE of these each. Please. We like to eat at this house. Maybe we'll have leftovers. If we're lucky. So her $5.34 dinner doubled is what I'm preparing.
Here's what I used. The prices are what I had receipts for since I didn't have all of them.
2lbs ground beef (5.31)
1 small onion, chopped (cheap ;p)
30oz tomato sauce (.99)
2 tsp minced garlic
2 tsp vinegar (I used apple cider vinegar because I forgot I used all the white vinegar on a project to be blogged about later)
2 Tbs prepared mustard
2 Tbs brown sugar
salt and pepper
8 provolone cheese slices (3.59)
8 hamburger buns (2.39)
I cooked the hamburger and onions together seasoned with pepper. Then drained.
In the same (now empty) skillet, stir together the tomato sauce, garlic, vinegar, mustard and brown sugar, salt and pepper. Then add the beef and onions back. Simmer for about another 10 minutes until its all warmed through and ready to eat!
