These require a little prep time, but OH so worth it. My goodness, I've never had a better grilled cheese sandwich. Ever.
Here's what you need to start:
To make 4 sandwiches:
8 jalapeno peppers, sliced lengthwise and seeded
8 slices sourdough bread
butter
cream cheese
shredded cheddar cheese
tortilla chips
Broil your peppers face down on a cookie sheet for about 10 minutes or so until the skin is black.
Put the peppers in a zipper bag, seal and leave them for about 20 minutes, then remove the skins.
On one slice of bread, spread some cream cheese and place your peppers on top.
Add the shredded cheese on top of that and crush up a couple of tortilla chips to sprinkle on top of the cheese.
Put a little more cream cheese on the other slice of bread and butter the top of that one.
Place butter side down in your pre-heated skillet (medium heat), then butter the top of the other slice of bread. Cook for 2-4 minutes per side.
I served these with oven fries and tomato soup as the "ketchup"
The kids just had regular grilled cheese sandwiches. :)
