Tonight concludes my Pinterest experiment of cooking from Tiffany's Eat At Home Cooks Week 2 menu. I made her Barbeque Chicken Fajitas. They are really yummy.
I think the most important ingredient here is the Sweet Baby Ray's BBQ sauce, so so good.
Here's what I used to start.
4 boneless, skinless chicken breasts
1 bottle Sweet Baby Ray's BBQ sauce
1 small onion
1 bell pepper
shredded cheddar cheese
salt and pepper to taste
grill seasoning (used on the veggies)
oil or butter for sauteeing the veggies
Tiffany's recipe suggests grilling the chicken and basting with the sauce as it grills. I didn't do this and my house was a smoky mess for a few minutes because I decided to prepare the chicken in a cast iron skillet. Use the grill. Trust me.
You'll slice the chicken into thin strips when its done.
Sautee your pepper and onion in a little oil or butter to soften and carmelize a little. I also added some chicken rub to my veggies for more flavor. It was a last second decision and it was good.
Warm your totillas in the microwave for about 30 seconds and assemble. Don't forget to add a little of the Sweet Baby Rays on top of your fajitas. Yum!
