So, here's the thing. Its Friday night. I don't care where my kitchen is at this point, but this fabulous dish is on the menu for tonight. I started this project knowing there would be days when I can't cook, but what about the days I just don't feel like it? Order pizza? Chinese? Chinese buffet sounds amazing, but I have these two kids who still can't control themselves in public. Geez, who raised those heathens? Oh...
So, I have this incredible recipe that is totally from scratch. I was game. Gonna do this. I can do this. Eh...nah. Then I found an easier one more my speed...and then I thought, what the heck. I can make this even easier. I've only got to provide nutrition to people that never even knew I could cook (aforementioned heathens)..how hard can this be? Turns out, its quite simple when you put your mind to it.
Here what I used:
You'll recognize that ziplock bag of leftover chicken from Chicken Broccoli Divan.
- Cooked cubed or sliced chicken (want an even easier way? slice up a rotisserie chicken from the grocery store or better yet! They sell fabulous packages of carved meats with the lunch meat now.)
- Caesar dressing (I bought a good brand since I'm cheating everywhere else)
- Bacon pieces (make your own if you're so inclined)
- Slider buns or regular buns or bread work just fine
- Romaine lettuce
- Parmesan cheese (shredded is fine, but I'm going to shave this block to be fancy)
Since I'm starting with cold chicken, I warmed the chicken and dressing together in a saucepan over medium heat. With all the stirring around, it kinda turned into shredded chicken. I'm good with that.
While that's heating through, I'll take the opportunity to share this fabulous tip on how to make perfect bacon, which I'm obviously not doing. Hello, I put back the microwave bacon when I found that handy little bag of salad bacon. I'm not ashamed.
Now for the assembly. Very simple. I'm using slider buns so I'm going to toast them a little in a skillet with some butter (mimicking the crouton)
Once they are nice and toasty, layer lettuce, chicken, bacon, and the cheese on your buns. I put a little extra dressing on top of mine.
To shave your cheese, use a potato peeler.
Dinner time!! I'm serving with pasta salad (from a box, of course).
